VEGAN BROWNIES by Nina Zorcic

Flax egg (2 tablespoons ground flaxseed + 4 tablespoons water)
150g of erythritol
110g coconut oil
1/4 teaspoon baking soda
56g of water
A pinch of salt
1/2 teaspoon bourbon vanilla powder
60g cocoa powder
112g of defatted almond flour
100g chopped sugar – free dark chocolate

Preheat the oven to 320 ° C. Mix the flaxseed ingredients and let sit for 5 minutes. Then add melted and cooled oil and erythritol and mix with a hand mixer until the mixture becomes fluffy. Add vanilla and water and mix for 2 minutes. Sift flour, soda, salt and cocoa powder into a bowl and mix with a silicone spatula until everything is combined. Add the chopped dark chocolate and stir. Pour into a baking dish lined with baking paper and bake for 35 – 40 minutes. Once baked, leave in the baking pan for another 15 minutes, then transfer to a cooling rack and allow to cool completely! This is important, otherwise they will not cut nicely and will crumble. Enjoy ?

Veganski browniji brez moke in sladkorja 


Laneno jajce (2 jedilni žlici mletih lanenih semen + 4 jedilne žlice vode)
150g eritritola
110g kokosovega olja
1/4 čajne žličke sode bikarbone
56g vode
Ščep soli
1/2 čajne žličke burbonske vanilije v prahu60g kakava v prahu
112g razmaščene mandljeve moke
100g nasekljane temne čokolade brez sladkorja

Pečico segrejte na 160°C. Sestavine za laneno jajce zmešajte in pustite stati 5 minut. Nato dodajte stopljeno in ohlajeno olje in eritritol ter zmiksajte z ročnim mešalnikom, dokler zmes ne postane puhasta. Dodajte vanilijo in vodo ter mešajte 2 minuti. V posodo presejte moko, sodo, sol in kakav v prahu ter s silikonsko lopatico premešajte dokler ni vse povezano. Dodajte nasekljano temno čokolado in premešajte. Prelijte v pekač, obložen s peki papirjem in pecite 35 – 40 minut. Ko so pečeni, pustite v pekaču še nadaljnih 15 minut, nato pa prestavite na rešetko za hlajenje in pustite, da se popolnoma ohladi! To je pomembno, drugače se ne bodo lepo rezali in bodo razpadli. Uživajte ?
